Vegan Tomato Sauce - Perfect with Pasta!


This pasta sauce is quick to make, and very tasty. Add to pasta, for a quick and easy meal, or use it as a salsa for nachos! Full of vibrant flavours and vegetables, not only does it taste good, but it’s also good for you! This recipe makes around 8 portions that can be frozen to use later on. Feel free to add other vegetables to make a thicker sauce, or a hearty vegetable stew.


Serves 8 – Total Time: 45 minutes


Ingredients:

1 tablespoon of vegetable oil

300g mushrooms, sliced

1 aubergine, cut into 1cm cubes

1 pepper, diced

1 onion (red or white), diced

3 cloves of garlic, finely chopped

1 tin of chopped tomatoes

1-pint vegetable stock

1 teaspoon of paprika

1 teaspoon mixed herbs

1 teaspoon of sugar

Pinch of salt and pepper


Equipment:

1 large pan

1 wooden spoon

1 knife

1 chopping board


Method:

1. Chop all of the vegetables into the desired size

2. Add the oil to the pan, followed by the vegetables

3. Cook the vegetables until soft

4. Add the garlic and fry some more

5. Add the tin of chopped tomatoes and vegetable stock

6. Next add the paprika, mixed herbs, salt, pepper, and sugar

7. Simmer for 20 minutes or until the consistency is as you like it

8. Add to pasta or put in Tupperware to freeze for another day!
