Chocolate Cake Life Hack



The recipe for this cake is super easy, hassle free, and needs few ingredients. The cake itself is vegan as you use a can of diet coke as the raising agent instead of eggs and vegetable oil. The icing is not vegan, but you could easily substitute the non-vegan ingredients for vegan ones, or not use the icing at all and make the cake mix into a brownie tray bake, or cupcakes instead.


Serves 12 - Total Time: 35 minutes


Ingredients:

For the cake:

1 Betty Crocker cake mix of your choice (I like the Devil’s Food cake mix best)

1 can of diet coke

For the chocolate buttercream:

170g butter

350g icing sugar

4 tablespoons cocoa powder

2 tablespoons of milk


Equipment:

1 large bowl

1 electric whisk (optional)

2 8” cake tins

1 spoon

Scales (for the chocolate buttercream)


Method (for the cake):

1. Set the oven temperature to 180°C (160°C for fan assisted ovens) or gas mark 4

2. Tip the cake mix into a large bowl

3. Pour in the can of diet coke

4. Stir until well combined and there are no lumps (use an electric whisk for ease)

5. Pour batter into two well-greased cake tins

6. Place in the oven and cook for 25-30 minutes

7. Allow the cake to cool


Method (for the chocolate buttercream):

1. Whilst the cake is cooling, add 170g butter to the bowl

2. Add 350g icing sugar, a bit at a time

3. Mix in the 4 tablespoons of cocoa powder

4. Add the 2 tablespoons of milk to create a looser chocolate buttercream

5. Spoon half of the chocolate buttercream onto one of the cakes

6. Spread around evenly

7. Add the other cake on top of this

8. Spread the remaining chocolate buttercream on top

9. Enjoy your cake!
